My Go-To Snack: Power Balls
Am I the only one who feels like it's impossible to eat a meal as a mom? I either waste half of nap time making myself lunch or I end up eating some pretzels and the leftover apple from the girls. This is one of my favorite recipes for a quick (and filling) snack for the days I don't get to eat a real lunch! My mom used to make these for us as an after school snack, so they're great for kids too!
Here's what you'll need:
- 1 cup of peanut butter (you can use any nut butter - crunch or creamy)
- 1/2 cup of protein powder (I use this organic vanilla plant protein powder)
- 1/2 cup of honey
- 4 tbsp of ground flaxseed
- 1 cup of oats (I recently added this and like how it makes it go further and adds some fiber and protein)
- graham cracker crumbs
Mix all the ingredients together (minus the graham cracker crumbs) into 1" balls. Then roll them in the graham cracker crumbs, and freeze! I store them in the freezer, so they last a couple months! I typically take out a couple 10 minutes or so before I want to eat them so they are a little easier to bite into, but they're good frozen or thawed.
